Boiled spinach dish
Yeah, you read that right: I ate spinach–and not as an ingredient surrounded by eggs and butter. I tried this easy spinach recipe from Simply Recipes and it turned out well, to my pleasant surprise. (Surprise based on my mediocre cooking skills, that is, not the recipe.)   So, yay spinach! I’ll definitely try it again, especially as my husband and I take baby steps toward eating more healthfully.

On the subjects of health and pleasant surprises, I found a ton of links on staying healthy and living well, and I’d love to share them with you. Here we go!
