Simple Sharing: I Totally Ate Spinach Edition

Yeah, you read that right: I ate spinach–and not as an ingredient surrounded by eggs and butter. I tried this easy spinach recipe from Simply Recipes and it turned out well, to my pleasant surprise. (Surprise based on my mediocre cooking skills, that is, not the recipe.) So, yay spinach! I’ll definitely try it again, especially as my husband and I take baby steps toward eating more healthfully.

Sara, it took me decades to learn to like spinach and now I’ll eat it in almost any form, so welcome to the club! Thanks for the links too, I’m going to check some of them out!

Congrats on the spinach Sara. Believe it or not, the more you eat the stuff (”clean” and fresh veggies), the more you will like them. Your palette adjusts. I made the shift several years ago, and now things like Brussels sprouts make my mouth water (but I’m only allowed to cook them in the summer with all the windows open because my wife hates the smell of them… LOL).

MMM Spinach. I usually prefer to eat mine in salad form or in omelets our soups. I just harvested my first spinach of the season from my garden so I’ll have to give this recipe a shot. Thanks.

That’s great about the spinach! I had to wean myself into it- first incorporating it into a salad and such. It took me a REALLY long time to start liking cooked spinach, though. But now its good stuff

Way to go on the spinach! A lot of veggies can be made more palatable by baking them — I’ve never tried it with spinach, but definitely with things like kale and broccoli. It’s worth a shot, if you want to get into vegetables!

It must be spinach week. My 18 month old (who manages to spit out all veggies while keeping the meat in his mouth) ate sauteed spinach this week too. It is now a staple on our menu.

I’ll have to give that a try! I’ve been trying new veggies lately, or at least new ways to cook them, check out my blog, I tried roasted cauliflower the other night, it was really yummy!

I must be weird. I buy baby spinach, microwave it and puree it in a blender. It tastes just fine to me.
